How to Make Fish Quesadillas

Quesadillas are a popular way to serve halibut, tilapia, smoked salmon or other types of fish. A variety of recipes are available, using cheeses, peppers, tomatoes and other ingredients. Quesadillas are simple to prepare, require few ingredients and can be modified by substituting or adding ingredients. In addition to its wonderful flavor, most fish are high in omega 3 fish oils.

A key ingredient of quesadillas is cheese. Several types of cheeses are suitable, allowing cooks to substitute when necessary or vary a recipe based on personal preference. Popular quesadilla recipes contain Mexican style cheese, Monterey jack, cheddar, American or other choices. Depending on recipe variations or local preferences, quesadillas may contain additions such as avocado, cilantro, onion, peppers, tomatoes or other ingredients.

Tortillas are thin, round, flat, unleavened bread made from corn or flour. Corn tortillas are usually 6 inches in diameter and are packaged as partially-cooked products. Flour tortillas are better suited for making quesadillas although either type will work.

Salmon Quesadilla Recipe

Ingredients

4 flour tortillas
4 oz. halibut, talipia or smoked salmon
6 oz. cheese (Mexican melting cheese, Monterey jack, cheddar or American)
butter or olive oil
Any of the following: jalapeño peppers, tomato or avocado (sliced thin)
1 tablespoon chopped cilantro
salt and pepper to taste

Directions:

1. Cook fish on a grill or in broiler. Separate into flakes, removing any skin or dark meat.

2. Slice cheese and any optional vegetables into small thin pieces.

3. Heat a skillet, adding just enough butter or olive oil to prevent tortillas from sticking.

4. In the heated skillet, add 1 tortilla, then position fish flakes, cheese, peppers, tomatoes or avocado slices and sprinkle with chopped cilantro. Cover with second tortilla.

5. Cook until bottom tortilla begins to brown. Carefully flip and brown remaining side.

6. Remove from pan and cut into 4 sections. Serve immediately.

Like most other seafood dishes, the success of the meal depends greatly on the quality and freshness of the basic ingredients.
