Salmon Cake Recipe

How do you make salmon cakes with a pan gravy sauce?
This is made with fried salmon cakes. Many people make salmon cakes this way. I think it is a old southern recipe. I have never seen any recipes in print. The people that i have seen make this from memory.
Straight from my Southern Grandma’s recipe box:
1 can of salmon, drained
1 egg
1/4 cup breadcrumbs or crushed up saltines
chopped celery
chopped onion
salt and pepper
combine all the ingredients and then make into patties and fry in a pan over medium-high heat until brown.
My grandma always put sausage in her gravy, and she’d brown the sausage and then use the dippings in the bottom of the pan to make the gravy if you’d like. Over low heat, slowly mix in flour and constantly stir so there’s no lumps. Add a little salt and a lot of pepper.
You can also make this recipe with canned tuna…it’s a great way to eat on a budget, and it’s sooo quick to make! Have fun!
