How do I marinate a piece of meat correctly?

The marinade varies but you leave it in the sauce/spices for a minimum of two hours but best overnight. The idea is not to taste the flavors but enhance the taste of the meat. If you want to taste the flavors then you put it on after the meat is cooked.

I marinade my ribs in fruit juice, garlic (mincey or powder NO salt), onion power (no salt), and brown sugar. I prefer my steak rare but some times I rub it with fresh garlic. Chicken I never marinade.
