My dad is a VERY picky eater & needs to slim down. Any recipe ideas?

My Dad’s diet is too high in fat and salt. I need to help him lower these because he’s been having some issues. Please help.
OK, so the list of things he won’t eat.
-fish
-shellfish
-nuts
-any veggies (except corn, carrots & lettuce) He will eat tomato products (like salsa & pizza sauce) but not tomatoes
-most fruits (except apples & bananas)
-Mayo or miracle whip or mustard
I’m probably forgetting some things, but anything you can give me will help.

You are wonderful trying to help him out but you can’t make him do this.
Take it from me I have been there and done it. No one can make you lose weight. You have to want to do it for yourself. You can’t lose weight for a wedding, a reunion, a trip or anything else. You have to want to do it because you want to. Oh yea you can lose weight but to keep it off is another thing. It is a lifestyle change and not an easy one if you don’t want to do it.
The best thing you can do is try to get him active. That is before even touching the diet side of things. Get him to go for a walk with you every evening. This will help and it will give you a chance to talk to him. As you go on these walks you can express your concern and maybe he will start making changes. As the walks become easier and longer run a bit and do some other outdoor activities. If nothing else enjoy the time with your dad and he may begin to make changes on his own.
